Cheshire potato soup recipe details
Ingredients
1 l | pork stock |
300 g | potatoes, peeled and diced |
2 stalk(s) | leek, finely chopped |
2 | carrots, peeled and grated |
salt and black pepper | |
30 g | pinhead oatmeal |
100 g | freshly grated Cheshire cheese |
2 slice(s) | brown toast, cut into 2cm cubes |
2 tbsp | butter |
Instructions
In a skillet, heat the butter and fry the bread cubes until golden and crispy all around.Bring the pork stock to a boil, together with the potatoes, leeks and carrots. Season with salt and pepper and simmer for 10 minutes. Add the oatmeal and simmer for another 10 minutes until the soup has thickened and the vegetables are done.
Add half of the cheese and cook stirring until melted. Check seasoning and correct if necessary.
Ladle the soup into 4 warmed soup bowls and serve sprinkled with the remaining cheese and the croûtons.
